Just the best of the Sicilian tradition

Legend has it that there once were bright stars in the sky, the Engraulines, so vain that they wanted to shine brighter than the Moon.

To punish their pride, the Eternal Father decided to banish them from the sky, casting them into the sea and turning them into shiny, silvery fish: anchovies

(Engraulis encrasicolus)

Our Products

Our anchovies tell the story of an extremely fresh fish, processed according to ancient methods: they are caught in the best season, offshore, and processed quickly to guarantee and preserve their freshness. The result can be enjoyed in these firm, meaty fillets with a pleasant taste of the sea.

In our seas, anchovies are caught between May and September, but the best fish are those caught between May and June: in fact, the anchovies have not yet finished their migration
and so their flesh is tastier and more tender. The Fior Fiore dell’Acciuga is born from this selection.

Our History

50 years of experience

Our anchovies tell the story of an extremely fresh fish, processed according to ancient methods: they are caught in the best season, offshore, and processed quickly to guarantee and preserve their freshness. The result can be enjoyed in these firm, meaty fillets with a pleasant taste of the sea.

The expertise, experience, and love for this work passed down to his children by the founder, Pasquale Carlino, mean that the Carlino company can still be, today, an important point of reference in the international fish supply chain.
